Vegemite Toasties

Ingredients

Slices of Sandwich Bread
Butter
Vegemite
Cheddar Cheese grated

It seems odd to write a recipe for what is, essentially, toast.  However, these are legendary in our family.  My mother in law comes armed with supplies of them to greet us at the airport when we arrive in New Zealand from the UK and even once sent a box of them from New Zealand to my son who was away at school.

White sandwich bread works best.

  1. Lightly butter (or spread) slices of bread.
  2. Spread lightly – medium (but not thick) vegemite all over
  3. Grate some cheddar cheese over each slice (but not too thickly or you lose the vegemite taste).
  4. Cut each slice into 4 “fingers” and place onto an oven tray.
  5. Bake at about 120˚C or 110˚C Fan for about 2 hours or if in a hurry 150˚C or 140˚C Fan for approximately 3/4 hr. They should be baked and crispy.
