Turkey burgers are a great idea for a casual Thanksgiving dinner or for a lower calorie barbecue alternative. If you can’t easily find turkey mince you can substitute minced chicken.
- Heat 1 Tablespoon of the oil in a frying pan and add the chopped onion and cranberries. Soften these for 3-4 minutes over a gentle heat then set them aside to cool.
- In a large bowl, mix the turkey mince, beaten egg, breadcrumbs, chopped parsley, salt and pepper and when cool, the onion and cranberries. Put the mixture into the fridge to chill for at least 3o minutes so that it is easier to form the patties.
- When chilled, divide the patty mixture into 4. Roll each into a ball and then press flat to make into the patty shape.
- When the patties are at room temperature, heat the remaining oil in a frying pan and gently fry the patties for approximately 6-7 minutes over a moderate heat (check that the heat isn’t too high or the underside of the burger will burn and the inside uncooked) then flip and cook the other side for about 6-7 minutes, gently pressing the patties down with a spatula to make sure they are making full contact with the frying pan. You can double check the patty is cooked through by cutting into the centre of the fattest patty.
- Serve on toasted brioche or hamburger buns with cranberry sauce, mayonnaise, lettuce, tomato and (if desired) rashers of cooked streaky bacon.
