4-6 large Potatoes (use a floury or general purpose kind such as King Edward, Maris Piper, Desiree, Agria, Rooster)
1 1/2-2 Tablespoons Olive Oil
2 teaspoons Paprika
1/2 teaspoon Cayenne Pepper
1/2 teaspoon Mild Chilli Powder
1/2 teaspoon Sea Salt
These are a nice accompaniment to grilled meats but are also great as a snack with some sour cream. Use a floury potato.
Preheat the oven to 200˚C Fan or 210˚C conventional.
Wash any dirt from the potatoes and dry them with a cloth or clean tea towel. You don’t need to peel them. Chop them in half lengthwise and each half into wedge shapes.
Put the oil, spices and salt into a large shallow baking dish and give them a stir to combine them. Then add the potato wedges and give them a good mix around to coat each wedge with the spicy oil.
Put them into the oven and cook for 40-45 minutes, giving them a stir every 15 minutes.
