This recipe makes a lovely domed cookie that is slightly crunchy on the outside and soft on the inside.
- Preheat the oven to 190˚C or 180˚C if using a fan oven.
- Combine the flour, baking soda and salt in a small bowl.
- In a separate bowl, beat the softened butter, both sugars and the vanilla extract until creamy. This will take a couple of minutes.
- Add the egg and beat in well, scraping down the sides to add in all of the mixture then beat the flour mixture in gradually.
- Pour in the chocolate chips and mix in well with a spoon.
- Using two dessert or soup spoons, drop rounded spoonfuls of mixture onto ungreased baking sheets.
- Cook for 9-11 minutes, until the cookies are golden brown.
The cooking time will depend on the size of the cookies. Larger cookies will obviously require slightly longer cooking time. The cookies will still feel very soft when you take them out of the oven but will firm up as they cool. Rest them on the tray for 2-3 minutes and then remove them to a wire rack to cool completely.
The mixture makes approximately 14 cookies of 8cm/3 inch diameter.
