Tear the lettuce into large bite-sized pieces and put them in a large bowl. Add the croutons and shave over some parmesan shavings using a vegetable peeler.
Add a Tablespoon of the Caesar dressing and give everything a good mix – I use my hands. If you feel you want more dressing, add a further Tablespoon of the dressing and mix again. (Keep adding, a tablespoon at a time until you are happy that it has enough).
Put the salad into a serving dish.
If you want, you can make the salad more substantial by adding chopped cooked chicken breast and/or marinated anchovy fillets. You could also add cooked prawns or a poached egg.

I don’t think anchovies are optional in a Caesar salad.
The philistines can pick them out.
It’s superb especially with chicken breasts.
