3 Overripe Bananas (approximately 3/4 cup when mashed)
1/3 Cup Melted Butter
2 large Eggs
1/2 Cup Granulated Sugar
1/3 Cup Milk
1 teaspoon Baking Soda
1 teaspoon Cinnamon
1 teaspoon Vanilla Extract
This is a great way to use up overripe bananas.
Preheat the oven to 175˚C Fan (180 convection) and grease and line a loaf tin (approximately 9 x 5″ / 23 x 13cm).
In a large bowl, mix the flour, baking soda, sugar and cinnamon.
In another bowl, mash the banana and add the melted butter, beaten eggs, milk and vanilla extract.
Add the wet ingredients into the dry ingredients and mix gently until just incorporated.
Spoon the mixture into the prepared loaf tin. Cook in the oven for 35 -45 minutes. (Check after 35 with a skewer).
If the loaf starts to colour on one side more than the other, turn the tin around half way through the cooking time.
To check if it is cooked, insert a skewer (or wooden kebab stick) into the centre. If it comes out cleanly then the loaf is cooked. If there is wet mixture on the skewer, continue cooking for a further 5-10 minutes.
