ANZAC biscuits are a New Zealand tradition. Although it was thought that they were baked and sent to the Australian and New Zealand Army Corps troops to keep their morale up during the first world war, some writers now think that instead they were sold at local events in Australia and New Zealand and the funds used to support the war effort. No doubt they could have been sent abroad as the biscuits are pretty robust and would travel well. For this reason, they are popular in New Zealand school lunchboxes!

Perfect recipe, I’ve never been able to cook a decent Anzac biscuit until now, thanks! Practice run today and will cook some giant ones for the school bake sale on Friday!
