Ingredients

A bunch of fresh Asparagus
1 Tablespoon Canola (Rapeseed) or Olive Oil
Sea salt and Fresh Pepper

Roast asparagus is particularly delicious, not only on its own, but also as an addition to salads, quiches or pasta dishes.

  1. Preheat the oven to 190˚C Fan or 200˚C.
  2. Remove the woody ends of the asparagus spears (either snap these off by hand or use a knife).
  3. Lay the spears flat on a baking tray.  Drizzle them with oil and sprinkle over sea salt and a good grind of black pepper.  Roll the spears in the oil and salt and pepper to make sure all sides are covered.
  4. Cook the asparagus in the oven for approximately 20 minutes or until they are lightly toasted at the edges and the stems cooked through.  (If you have very thick spears they may need an extra 5 minutes. Similarly, skinny spears may only take 15 minutes).
